Aloo Gobi | Punjabi Style Aloo Gobi Masala
A very popular and quick punjabi recipe for Aloo Gobi. We have grown up eating this yummy dish, a simple yet very satisfying sabji to go with roti or phulka. A go to dish that suits almost every household. Kids love it too. Goes very well with cucumber raita. Its a perfect choice for weekday meal.

INGREDIENTS
- 2-3 tsp oil
- 1 tsp cumin
- 1/4 tsp asafetida
- 1 tsp finely chopped garlic
- 1 tsp finely chopped ginger

1/2 cup onion

1 cup tomato puree
- 1 cup cubed potato
- 1/2 cup cauliflower florates

1/2 tsp turmeric powder

1 tsp red chili powder
-
1 tsp coriander powder
- 1 tsp garam masala

1 tsp salt (as per taste)
- 1 tsp chopped green corriander
INSTRUCTIONS
- Add cooking oil in a pan and let it get hot.
- Add cumin seeds and let it crackle it. Then add asafetida.
- Add finely chopped garlic and saute it for 1-2 mins. Then add ginger.
- Add onion and cook until golden brown. Keep stirring.
- Add Tomato puree and add green chili (optional).
- Cook until oil separates.
- Add dry spices - turmeric powder , red chili powder , coriander powder, cumin powder, garam masala and salt.
- Cook the spices for 2-3 min , add little water if masala starts buring.
- Add cubed potato, mix well. Cover and cook for 5 mins or until potatoes are half done.
- Add cauliflower, mix well. Cover and cook for 5-7 mins or until its done.
- Add garam masala and mix well.
- Garnish with green corriander.
- Enjoy with roti(Indian bread) and cucumber raita.
NOTES
- Cube potatoes in equal size so as potato cooks uniformly.
- Don't overcook cauliflower. This taste awesome if a bit crunchy.
