Dal Makhani | Quick and easy dal makhani recipe.


Dal makhani or dal makhni is a dish originating from the Punjab region of the Indian subcontinent.
Its primary made from whole black lentils, red kidney beans, butter and cream.
The dish gets its richness from the starch released from the dal and by use of cream or butter.

We have tried it without cream and it tastes equally good.

INGREDIENTS

  • 1 cup whole urad dal
  • 1/3 cup kidney beans (rajma)
  • 1 bay leaf
  • 1 cinnamon stick 
  • 2-3 green cardamom
  • 1 black cardamom
  • 2-3 cloves
  • 2-3 tbsp clarified butter / ghee
  • 1 tsp cumin
  • 1 tsp carom seeds
  • 2 tsp ginger garlic paste
  • 1/2 cup onion
  • 1 cup tomato puree
  • 1 tsp green chili
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp salt (as per taste)
  • 1 tsp chopped green corriander
  • 1 tsp dried fenugreek leaves
  • 2 tsp butter
  • 1/2 tsp ginger julienne
  • 2 tsp fresh cream

INSTRUCTIONS

  1. Mix, wash and soak dal and rajma overnight. 
  2. Wash thoroughly and add it pressure cook with enough water. Add salt to taste, turmeric powder, bay leaf, cinnamon, small and big cardamom.
  3. Pressure cook for 5-6 whistles or until dal is cooked (refer video).
  4. Mash some dal as it will release starch and that gives the buttery to dal. Keep it aside.
  5. Add clarified butter in a pan and let it get hot.
  6. Add cumin seeds and let it crackle it. Then add carom seeds.
  7. Add onion and cook for 2-3 min. 
  8. Add ginger garlic paste and cook for 30 sec.
  9. Add Tomato puree and add green chili (optional).
  10. Cook until oil separates.
  11. Add dry spices - turmeric powder , red chili powder , coriander powder, cumin powder, garam masala and salt.
  12. Cook the spices for 2-3 min , add little water. 
  13. Add dry fenugreek leaves and green corriander. 
  14. Add dal and mix it properly. 
  15. Add water as per your liking gravy consistency. 
  16. Let it simmer for 4-5 mins.
  17. Add some butter and ginger julienne.
  18. Finally add some fresh cream and the dish is ready.  
  19. Enjoy with roti(Indian bread).
