A little bit of all veggies combination makes this delicious creation.
Add whatever veggie you like and you got yourself a amazing vegetable stir fry that you can enjoy with rice or roti (bread).

INGREDIENTS
- 3-4 tsp cooking oil
- 1/2 cup potato
- 1/2 cup carrot
- 1/2 cup cauliflower
- 1/3 cup bell pepper
- 1/3 cup peas
- 6-8 paneer cubes
- 1 tsp cumin

1/2 tsp crushed ginger
- 1/2 tsp crushed garlic

1/2 cup onion
- 3/4 cup tomato puree

1/2 tsp turmeric powder

1 tsp red chili powder
-
1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala

1 tsp salt
- 2 tsp thick yogurt
- 1 tsp green cilantro to garnish
INSTRUCTIONS
- Add 1-2 tsp cooking oil in the pan and let it get hot.
- Add potato and cook for 1 min.
- Add carrot and cook covered for 2-3 mins.
- Add cauliflower, mix it and saute for 1-2 mins.
- Add a pinch of turmeric powder, cover and let it cook for 2-3 mins.
- Add bell pepper and peas and saute for 1-2 mins.
- Add panner cubes, saute it again for 1-2 mins.
- Keep the saute vegetables aside.
- In another pan, add 1-2 tsp cooking oil and let it get hot.
- Add cumin seeds and let it crackle it.
- Add onion and cook for 2-3 min.
- Add crushed garlic & ginger and saute for 1 min.
- Add Tomato puree and cover n cook for 2-3 mins.
- Cook until oil separates
- Add dry spices - turmeric powder , red chili powder, cumin powder, coriander powder, garam masala and salt.
- Add water and cook for 2-3 mins.
- Add yogurt and keep stirring for 2-3 mins.
- Add the saute vegetables and mix it.
- Add water as per your liking gravy consistency.
- Cook for another 2-3 min and the dish is ready.
- Garnish with cilantro leaves & enjoy with roti(Indian bread) or rice.
