Mix Vegetable Sabji.

A little bit of all veggies  combination makes this delicious creation.
 Add whatever  veggie you like and you got yourself a amazing vegetable stir fry that you can enjoy with rice or roti (bread).

INGREDIENTS

  • 3-4 tsp cooking oil
  • 1/2 cup potato
  • 1/2 cup carrot
  • 1/2 cup cauliflower
  • 1/3 cup bell pepper 
  • 1/3 cup peas
  • 6-8 paneer cubes
  • 1 tsp cumin
  • 1/2 tsp crushed ginger
  • 1/2 tsp crushed garlic
  • 1/2 cup onion
  • 3/4 cup tomato puree
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp salt
  • 2 tsp thick yogurt
  • 1 tsp green cilantro to garnish

INSTRUCTIONS

  1. Add 1-2 tsp cooking oil in the pan and let it get hot.
  2. Add potato and cook for 1 min.
  3. Add carrot and cook covered for 2-3 mins.
  4. Add cauliflower, mix it and saute for 1-2 mins.
  5. Add a pinch of turmeric powder, cover and let it cook for 2-3 mins.
  6. Add bell pepper and peas and saute for 1-2 mins.
  7. Add panner cubes, saute it again for 1-2 mins.
  8. Keep the saute vegetables aside.
  9. In another pan, add 1-2 tsp cooking oil and let it get hot.
  10. Add cumin seeds and let it crackle it.
  11. Add onion and cook for 2-3 min. 
  12. Add crushed garlic & ginger and saute for 1 min. 
  13. Add Tomato puree and cover n cook for 2-3 mins.
  14. Cook until oil separates 
  15. Add dry spices - turmeric powder , red chili powder, cumin powder, coriander powder, garam masala and salt.
  16. Add water and cook for 2-3 mins. 
  17. Add yogurt and keep stirring for 2-3 mins.
  18. Add the saute vegetables and mix it. 
  19. Add water as per your liking gravy consistency. 
  20. Cook for another 2-3 min and the dish is ready. 
  21. Garnish with cilantro leaves & enjoy with roti(Indian bread) or rice.
