Tomato Soup for Indian palate (Quick and Easy)
Today we are going to make Tomato Soup. its a easy to make quick recipe with very few ingredients , we are going to pressure cook the vegetables and temper it with butter.
This tomato soup is a real crowd pleaser , prepare it in any season , i personally like it in rainy or cold weather.

INGREDIENTS
1-2 tbsp clarified butter / ghee
- 10 count black pepper kernels
- 1 bay leaf
- 1/2 tbsp garlic cloves
- 1/2 cup onion
- 1/3 cup celery
- 1/3 cup carrot
- 2 cups tomato
- 1/2 tbsp salt
- 2 tbsp butter
- 1/2 tbsp black pepper powder
- 1/2 tbsp heavy whipping cream or fresh cream
INSTRUCTIONS
In a pressure cooker , add some ghee.
- Add in some whole black pepper kernels and 1 bay leaf.
- Add garlic and sauté for 2 min.
- Add Onion and let it get soft.
- Add celery , make sure you remove the top skin of the celery as it has more fibre and you chop it in small pieces.
- Add carrot and tomatoes.
- Add salt and cook for 2-3 min.
- Add water and bring to boil.
- Pressure cook for 3-4 whistles , this will soften up the vegetables
- Cool the vegetables and blend it, you can also strain them if you want more smooth finish.
- In a pan, add 2 tbsp butter.
- Add the blended or optionally strained tomato-vegetable mixture.
- Cook for 2-3 min.
- Adjust water as per the desired consistency
- Adjust salt per taste and add some black pepper powder.
- Add honey to balance the sourness.
- Cook for 1-2 min and your soup is ready to be served.
- Serve hot with some fresh cream and bread crumbs on top.
NOTES
When you are sauteing the vegetables(step # 4 ) , you might feel like it's started to burn or getting black , do not worry , reduce the heat. Once we add the tomato or water , the burning will stop.
- Add some honey if the tomato are too sour.
