Aloo Shimla Mirch
A simple combination of potato and green bell pepper , easy to prepare and perfect for weekday lunch or dinner.

INGREDIENTS
- 2 tbsp cooking oil
- 1 tsp cumin seeds
- 1 pinch asafoetida
- 1/2 cup onion
- 3/4 cup potato
- 1/2 tbsp garlic
- 1/2 tbsp ginger
- 1 tsp turmeric
- 1 tsp red chilli powder
- 2 tsp coriander powder
- 1 tsp dry mango powder
- 1 tsp salt
- 1/2 cup tomato
- 1/2 cup Capsicum / bell pepper
- 1 tsp garam masala.
INSTRUCTIONS
- In a pan add cooking oil
- Add cumin in heated oil and add pinch of asafoetida/heing.
- Add onion and sute for 1-2 min
- Add Potato and sauté onion and potato together for 3-4 minutes.
- Add ginger and garlic and cover. Cook for 2 -3 minutes.
- Add dry spices - chilli powder , dry mango powder and salt.
- Add tomato and cooke for 1-2 min.
- Add some water to avoid masala from burning.
- Cover and cook for 2-3 min.
- Add capsicum / bell pepper , cover and cook for 2-3 min.
- Check the potatoes by breaking them, if cooked as desired add Garam masala.
- Enjoy your hard work.
